Benolio
Our Benolio olive oil, made from Moraiolo olives grown in the clay soils of Tuscany, embodies local excellence. Harvested by hand in 3 to 4 days, the olives are carefully transported in 15 kg crates to preserve their freshness.
Cold-pressed in a nearby mill, the oil retains all its rich aromas. Perfect for enhancing grilled vegetables, salads, meats or bruschettas, it adds an authentic, tasty touch to every dish.
Tuscany... Where we grew up
Johanna and Paul Dayer's parents have acquired a sublime property in Tuscany in the commune of Castagneto Carducci. More than 300 olive trees, most of them hundreds or hundreds of years old, nestle on the steep slopes in the heart of the hills of the Bolgheri region. Here, Johanna and Paul produce an organic olive oil using the unique Moraiolo variety. An indigenous variety renowned for its elegant oils with fresh, vegetal aromas.
With her passion for the world of wine, Johanna naturally looks after the vines on this family estate. Here, we cultivate the very essence of Tuscan wines, renowned for their character and rich aromas. The vineyards, which are managed organically and biodynamically, are mainly planted with Syrah and Merlot. In 2021, Johanna launched ‘Il Cipresso’, a harmonious blend of these two grape varieties, reflecting all the authenticity and expertise of the region...

Il Cipresso
"Il Cipresso" est le premier vin de la gamme Hedo. C'est un assemblage composé de Merlot et de Syrah (50% de chaque).
Ce vin a été élevé pendant plus d'une année en barrique.
Il est issu de l'agriculture biologique et biodynamique.
L'étiquette représente la maison de vacances des parents de Johanna et Paul, là où, ils ont passé une grande partie de leur enfance.
Son nez est envoûtant avec des notes de cerises morello fraîches et de violettes.
Le premier millésime 2021 est épuisé, mais vous pouvez réserver les flacons de 2022 qui sortiront au printemps 2024.
